Mock 75 with LavenderHouse
Our house answer to the wedding toast. Lemon and lavender steeped down into a syrup, bitters for backbone, tonic for the lift — poured in a flute so every hand in the room is holding the same thing.
What’s in itThe Walters builds full zero-proof bar menus — craft mocktails made with house shrubs, cordials, brewed teas and bitters — for weddings, corporate events and private parties across the Oklahoma City metro.
Nearly half of American adults don’t drink at all — and at any given party you can add the designated drivers, the pregnant guests and everyone pacing themselves after cocktail hour. They shouldn’t be the ones holding a plastic cup of soda.
The most common complaint about mocktails is that they are too sweet — juice and soda with a garnish on top. Ours are built on house shrubs, cordials, brewed teas and bitters, so there is acidity and bitterness holding the sugar in check. Read the ingredient lists below: that is what the difference looks like.
A zero-proof drink served in a plastic cup announces itself across the room. Ours come in the same glassware, with the same garnish and the same care as everything else on the bar. Nobody has to look like they are being handled.
Zero-proof drinks sit on the same printed menu as the cocktails, named the same way. No guest should have to ask a bartender what they are allowed to have — that question is the whole problem.
The easiest way to make a bar feel like one bar: build the zero-proof drink as a mirror of the cocktail beside it, not a substitute for it. Same name on the menu, same glass in the hand, same garnish on the rim — so a guest orders by name instead of asking what they’re allowed to have.
Citrus, something floral, and bubbles — the toast either way.
Ginger beer and a mint sprig do the work. Only the base changes.
Bitter, botanical, orange peel over one big cube. Dry on both sides.
Real espresso, a crema cap, and the same reason to order it at 10pm.
Pink grapefruit and lime, long and cold, rosemary in the glass.
Mint muddled to order, fresh lime, soda over ice.
We’ll build a mirrored pair around your own signature drink too — tell us the cocktail you want named after the two of you, and we’ll design the zero-proof twin to go beside it.
More people than the couple planning the bar usually expects.
Gallup measured the share of U.S. adults who drink at 54% in 2025 — the lowest in nearly ninety years of its polling, and down from 62% in 2023. The catering trade has followed: a zero-proof option has gone from a nice touch to something guests simply expect to find.
The cost of getting it wrong is small and specific. A guest who is offered only water either drinks alcohol they didn’t want, or spends the night explaining a private decision to relatives. A good zero-proof menu quietly removes both.
Someone at every table is driving everyone else home. They should get something worth holding for it.
Often the guest least willing to explain why they are not drinking. A real drink in a real glass ends the conversation before it starts.
In recovery, on medication, observing their faith, or simply not tonight. None of it is anyone else’s business at a party.
Guests who drank at cocktail hour and want to pace themselves through dinner and dancing — the biggest zero-proof crowd of the night.

Zero-proof is part of every bar we run, never a separate booking. For the full drinks list, see our cocktail and mocktail showcase. Planning a wedding? Start with wedding bartending in Oklahoma City. For companies and dry workplace events, see corporate bar packages. And if you’re serving alcohol too, here’s how dry-hire bartending works.
Yes — The Walters builds a full zero-proof menu for every event we bar, at no separate booking. We design the non-alcoholic drinks alongside your signature cocktails so both arrive on the same menu, in the same glassware, with the same garnish. You can also book us for an entirely dry event with no alcohol served at all.
Plan for more than you would expect. Gallup put the share of American adults who drink at 54% in 2025 — the lowest reading in nearly ninety years of its polling, down from 62% in 2023. On top of the guests who never drink, you have designated drivers, pregnant guests, anyone on medication, and guests who simply pace themselves after cocktail hour. For most events we plan zero-proof volume for roughly a quarter to a third of the guest count.
Acidity and bitterness. A juice-and-soda drink has nothing balancing the sugar, which is why mocktails get a reputation for being cloying. We build ours on house shrubs (fruit and vinegar cooked down together), cordials, brewed teas, botanical syrups and bitters — the same structure a good cocktail gets from spirits and amari, achieved without alcohol.
Yes, and we recommend it. Building a mirrored pair — the same flavor profile, one with alcohol and one without, sharing a name and a glass — is the single easiest way to make a bar feel inclusive rather than segregated.
Yes. For larger events a separate zero-proof station cuts wait times and makes the non-alcoholic options visible without anyone having to ask. For smaller guest counts we usually recommend integrating them into the main bar instead, so the menu stays in one place.
Yes — several on our menu, like the Paloma Punch, are designed to be batched in a bowl or pitcher and poured to glass, which is how you serve a big reception quickly. Drinks that depend on fresh muddling or a foam cap, like the Cucumber Mojito or the Espresso Martini, are made to order.
Yes. Alcohol-free corporate events, daytime launches, and company parties where the organizers would rather not serve alcohol are a regular part of our work across the Oklahoma City metro. You get the same bartenders, the same bar, and a full menu — just with nothing to manage on the liability side.
No. Our dry-hire model applies to alcohol only — for a fully zero-proof bar there is nothing for you to buy at a liquor store. We handle the non-alcoholic ingredients as part of the service, quoted with the rest of your bar.
Tell us your date, your guest count, and what your people actually like to drink. We’ll design the zero-proof side of your menu alongside the cocktails — one bar, one list, everybody included.
